I have been cooking up a little storm over here in downtown Boston! Though I read through tons of food/cooking/baking blogs (and I love them all), How Sweet It Is has to be my favorite. If you haven't been to her blog just yet, you'll understand once you make it over to her site. Trust me. I mean, if the sound of Caramelized Pineapple Quesadillas with Strawberry Salsa doesn't convince you, I'm not sure what will.
On to the food: It was a super easy recipe, and after making it once, it became really easy to whip this up on those late nights after work and meetings.
Caramelized Pineapple Quesadillas
Ingredients: (serves 2)
2 c. fresh pineapple chunks, cut into squares
3 t. coconut oil (I was out of coconut oil, so I used evoo and coconut flakes - just as delicious!)
1/8 t. salt
1 small poblano pepper, seeded and diced (I left this one out)
1 boneless, skinless grilled chicken breast, shredded
6 oz. monterey jack cheese, grated
1/2 c. freshly torn cilantro
Recipe:
Heat a skillet over medium heat and add 1 T. of coconut oil (or evoo and coconut flakes).
Add pineapple (add in pepper if you decide to use it) and toss with salt and cinnamon, cooking until it's caramelized and golden, occasionally mixing, about 6-8 minutes.
Remove pineapple from skillet and place in a bowl.
Reduce the heat in the skillet to low, add another 1/2 t. of coconut oil/substitute.
Place a tortilla down, cover in cheese (don't use all of it!)
Add in the chicken, pineapple, pepper, cilantro, and another sprinkle of cheese.
Cook until golden, then gently flip, keeping all the ingredients inside.
Serve with strawberry salsa!
Strawberry Salsa
Ingredients:
1 medium tomato, chopped
3/4 c. chopped strawberries
1/3 c. freshly torn cilantro
1 lime, juiced
1/4 t. salt
1/4 t. pepper
Recipe:
Combine all ingredients together in a bowl and mix thoroughly (I used a food processor, but only chopped them once or twice).
Keeps well in the fridge for 2-3 days.
The original recipe calls for spicy strawberry salsa, but I was feeling sweet - so I took out the pepper.

G - You should check out A Full Measure of Happiness (fullmeasureofhappiness.com). Lauren has a TON of amazing recipes. Both healthy and not so healthy :) But all delicious!
